Queso Fundido Recipe(s)
One of the reasons I started this site in the first place was to share some of the delicious and crazy food I’ve made or come across. One of the more amazing things I’ve eaten lately gets the honor of being the first recipe shared.
Never buy pre-made cheese dip again.
The basic premise of Queso Fundido is “melted cheese plus toppings equals ridiculously delicious.” If that isn’t mathematical certainty, I don’t know what is. (Note: I’m really not that good at math.) So, while the recipe below works, don’t let that constrain you. I modified the original recipe I saw (from Food.com) and will continue to do so. I encourage you to do the same.
*CHEESE–I used Mozzarella (4oz), Monterrey (4oz), Manchego (3oz)
*TOPPING–I used Chorizo (4oz), Red Onion (half), Garlic, Poblano Peppers (1/2 seeded).
Preheat oven to 400, cube and mix all of the cheeses. As the oven is preheating, heat a pan with a little olive oil. Sweat the vegetables (about 1min). Add Chorizo and cook for about 10min. Meanwhile, put the cheese in a glass pan (spray well) and place in oven. It should take about 5min.
After everything is done, place the topping mixture onto the bubbly cheese and start dipping. If the cheese starts to harden back up, just put it back in the oven for a few minutes.
So, the title said recipe(s) because the mix-and-match possibilities are just so fantastic. Add some cheddar and top with Ham, Bacon and scrambled eggs for a breakfast version. Replace Manchego with Goat Cheese and Top with diced tomatoes and basil. Layer refried (or black) beans on top. Experiment!
